Happy Father's Day, y'all!  

Well, I'm back in town and ready to cook up some delicious food for you this week.  Our time away was fantastic.  We went to Truckee for 10 days, and got to do lots of fun, outdoorsy & active stuff like biking & hiking & swimming.  The air is so clean there, the snow covered mountain tops so beautiful and the water crystal clear - it's a very special place. The best part of vacation for me is not rushing around.  Since most of life is rushing from one place to another, it's just so nice to wake up in the morning and make a big pot of coffee, cut up some cantaloupe, scramble eggs, make toast and just chill out. Mornings are definitely my favorite part of being away.  It feels so rich to lounge in your pj's for however long you want drinking coffee & talking.  I LOVE it!  

We celebrated Father's Day yesterday since my parents are heading out of town today.  Here's the menu - grilled salmon, potato salad, chopped kale & radicchio salad, grilled bread, corn on the cob and for dessert watermelon & cookies.  Since it was such a gorgeous day, we got to eat outside on our patio.  That was the best part of the day for me!  It seems that whenever I plan an outdoor party, the weather does not comply.  It's either too windy or too cold.  But not yesterday! Yesterday was awesome. And my grilled salmon came out so good.  I'll tell you how I made it.  A few hours before I grilled it up, I sprinkled the salmon with salt, pepper & lots of lemon zest.  Then I brushed it with a mayo, dill, garlic & lemon mixture and let it sit in the fridge. Because the salmon was skinless, I couldn't cook it directly on the grill so I placed it in a disposable aluminum pan which is such an easy & mess free way to grill fish.  It came out perfect!  Seriously, the best grilled salmon ever.  I can't wait to make it again.  I served it with the extra dill mayo, and everything tasted great together. But definitely dining outdoors made the meal even better.
